Samphire, Bacon & New Potatoes
How to make
Wash samphire then blanch by plunging into unsalted boiling water for 30 seconds. Refresh in iced water, drain thoroughly and set aside.
Place new potatoes in a large pan of salted water, bring to the boil and cook until just tender, drain thoroughly.
Whilst potatoes are cooking, heat a large frying pan and fry the shallots and garlic in a little olive oil. Add the lardons of bacons and cook well. Next add the new potatoes to the bacon and continue to cook, shaking the pan to colour the potatoes all over. Add the samphire and a large knob of butter.
Season with pepper, mix together ensure that everything is heated through, serve immediately
1lb medium sized new potatoes scraped and quartered
2 shallots finely chopped
2 garlic cloves finely chopped
6oz smoked streaky bacon chopped into lardons
