Prawns with Lime and Chilli
How to make
Butterfly the prawns. If they are head on use sharp knife starting at bottom of head to end of tail. If without head start at top of tail but don’t cut through shell. Place in bowl with all of above ingredients and marinate in fridge for at least 4 hours.
Pre-heat griddle or heavy based frying pan. Cook for 2 minutes on each side. The prawns are cooked when the shell is red and the meat is opaque.
Remove from heat and add a squeeze of lime, some sea salt and a sprinkling of chopped parsley to serve. Serve straight from the pan or transfer to warmed serving dish.
If you’re feeling brave, suck the heads as this is where the best flavour is!!
16 large prawns, shell on
2 chillies, finely chopped
Juice of 2 limes
1 red onion, finely chopped
Handful flat leaf parsley, chopped
Pinch of sea salt
